From the Valley of Kashmir: The Comforting Delight of Nadir Yakhni

As a vegetarian, I am always on the lookout for delicious plant-based dishes that are unique to a particular region. During a recent trip to Kashmir, I discovered a dish that quickly became one of my favorites - Nadir Yakhni.

Ingredients:


500g lotus stem (nadir)

1 litre water

1 cup curd

1 tsp fennel seeds

1 tsp cumin seeds

1 tsp coriander seeds

2 black cardamom pods

3 green cardamom pods

2 cinnamon sticks

4-5 cloves

1 bay leaf

1 tsp ginger powder

1 tsp garlic powder

2 tbsp ghee

Salt to taste


Instructions:

Wash the lotus stem and peel off the outer layer. Cut into medium-sized pieces and keep aside.

In a pan, dry roast the fennel, cumin, and coriander seeds, black and green cardamom pods, cinnamon sticks, cloves, and bay leaf until fragrant.

Once cool, grind the roasted spices to a fine powder.

In a separate pot, add water and lotus stem and bring it to a boil. Reduce the heat and let it simmer for 10-15 minutes, or until the lotus stem is tender.

In a bowl, whisk the curd until smooth and add the ground spices, ginger powder, and garlic powder. Mix well.

Add the curd-spice mixture to the lotus stem pot and mix well. Let it simmer for 5-10 minutes.

In a separate pan, heat the ghee and add it to the lotus stem pot. Mix well and let it simmer for another 5 minutes.

Add salt to taste and serve hot.
